Great Lunch Salad - Less than 15 Minutes

​For those who will miss out I will ne posting a blog with the process soon!
From time to time I will be posting a quick meal idea. This was my lunch from today. I came home from the gym, checked out the fridge...kimchee, celery, white onion and I was off to the races!

This salad is about:
1/4 + cup of homemade Kim Chi
1/2 +/- of finely chopped celery
1/4 cup chopped white onion (for those who like onions raw!)
1/2  of a just ripe avocado
1 Tbls. Safflower oil mayo, or vegan mayo, or just a splash of olive oil or coconut, but get the fat in there!
1/4 to 1/2 teas. of Atlantic dulse flakes (get your minerals)
1/2 teas +/- Brewers Yeast
Toss it altogether, eat with whole grain toast, preferably sprouted and flourless, or as I did with Lundberg's Organic  tamari and dulse rice cakes.

High in fiber, minerals, fats, complete protein with the brewers yeast , the avocado boost the protein and fat as well. Satisfying and delicious!
